Indonesian Honey Consumers' Behavior and Sensory Preference for Commercial Trigona Honey

Consumption of honey has increased in recent years. This included trigona as a new market that is developing. research was conducted to (1) identify the consumption patterns for Indonesian honey, and (2) sensory attributes considered ideal by consumers which influence consumer acceptance satisfaction. There were 2 stages activity this study, including online survey 225 respondents testing samples using CATA (check-all-that-apply) method involving 64 untrained panelists. Data analysis carried out SPSS XLSTAT 2022 software. 4 used study: Apis bee samples. The study showed pattern influenced consumers’ age income. Health benefits, brand awareness, taste important factors behavior. honeys perceived they very familiar with taste. sweet aroma, aftertaste, caramel flavor, viscous like. floral flavor fruity aroma found appealing. However, strong sour taste, aftertaste decrease liking.
